Return the cast-iron skillet to medium heat. The leftover brown bits (fond) from the chicken are flavor gold. Add 3 tbsp butter and the minced garlic. Sauté for 1 minute until fragrant.

Heat a large cast-iron skillet over medium-high heat. Add the olive oil and 2 tbsp butter. When the butter stops foaming and the pan is nearly smoking, place the chicken in the skillet.
