Unlike Steam auto-updates which forced 2.01 on everyone (breaking mods), the Elamigos standalone updater lets you choose when to install. You keep a separate backup of your 2.00 folder to continue modded playthroughs while testing 2.01 on a cloned install.

This guide assumes you have downloaded the file named:
Cyberpunk.2077.Update.v2.01-ElAmigos.rar or similar.
