Even if the SIM is accepted, the carrier forces a specific APN (Access Point Name). For example, T-Mobile forces fast.t-mobile.com. If you want to use a business APN or a third-party IoT SIM that requires a custom APN (like iot.t-mobile.com or internet.telekom), you cannot change it in the stock UI.
